sodium carbonate

LabiIedarbības ceļš: Norīts, Saskare, Ieelpots

A common food-safe mineral salt; safe in the small amounts used in food, but the pure powder can irritate skin and eyes.

Sodium carbonate (also called soda ash or washing soda) is used in food as an acidity regulator and raising agent, and separately as a cleaning agent. At the tiny levels found in food it is essentially harmless, though concentrated or pure powder is irritating on contact.

Why it matters

Sodium carbonate is a simple salt made of sodium, carbon and oxygen. In food it's known as E500 and used to control acidity, help dough rise, or firm up things like noodles and pretzels (it's the alkaline solution pretzels are dipped in). It's also a key ingredient in washing soda and many cleaning products, where it works as a water softener and grease-cutter. In the body, once swallowed in food-level amounts, it just reacts with stomach acid and is processed like any other sodium salt — nothing exotic happens. Most people never need to think about it.
